Spring Pea and Mint Soup with True Salt Fine Grain Salt
This light and refreshing soup is the perfect way to celebrate the arrival of spring. With sweet peas and fresh mint, this soup is both healthy and delicious. Garnished with a sprinkle of True Salt fine grain, it's a dish that's sure to impress.
What you'll need:
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
4 cups fresh or frozen peas
1/4 cup fresh mint leaves, chopped
2 tsp True Salt Fine Grain Salt
Sour cream, for garnish (optional)
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until soft and fragrant, about 5 minutes.
Add the chicken or vegetable broth to the pot and bring to a boil. Add the peas and mint leaves and stir to combine.
Reduce the heat to low and let the soup simmer for 10-15 minutes, or until the peas are tender.
Use an immersion blender or transfer the soup to a blender and puree until smooth.
Season the soup with True Salt Fine Grain Salt and pepper to taste.
Serve the soup hot, garnished with a dollop of sour cream and some fresh mint leaves, if desired.
